METHOD: Extra Decadent Chocolate Pancakes

  1. Sieve the baking powder, flour, cocoa powder and sugar into a large bowl. In a jug, gently whisk together the milk and eggs, and then slowly pour them into the dry ingredients whilst whisking. Once the ingredients are combined, cover with clingfilm and put into the fridge to rest for about 20 minutes.
  2. While the batter is resting, it’s time to make the chocolate sauce. Place the chocolate, butter and milk in a small saucepan over a gentle heat, and stir with a spatula until melted. Once combined, remove the sauce from the heat and mix in the golden syrup. Whisk until shiny and keep warm while you cook the pancakes.
  3. Heat up a large frying pan over a medium heat and pour in a little bit of oil. Carefully drop spoonfuls of batter onto the base of the pan and cook for about 45 seconds, until you see bubbles start to form on top. The underside should be slightly golden. Flip over and cook on the other side for another 45 seconds.
  4. If you’re cooking in batches, keep the pancakes warm and stack one on top of another, with greaseproof paper in between.
  5. Serve in stacks with chocolate sauce poured all over the top.
