How to Make Açaí Berry Vegan ‘Nice Cream’

Who says that vegans don’t have any fun? If you fancy a tasty alternative to dairy ice cream, this acai berry ‘nice cream’ is the perfect substitute. Combining cashews, coconut milk, bananas and acai powder, this fruity dessert is soft, creamy, healthy, and packed full of flavour.

Prep:

Leave cashews soaking & bananas freezing overnight

Ingredients:

  • 160g of Raw Cashew Nuts
  • 80g of Full Fat Coconut Milk
  • 2 Bananas (sliced and frozen – do this the day before you make the ice cream)
  • 2 tbsp of Freeze-Dried Acai Powder
  • 1 Pack of Frozen Blueberries

METHOD:

  1. Soak the cashew nuts in the coconut milk overnight in the fridge.
  2. The next day, add the soaked cashews, along with the milk, to a food processor to blitz once more.
  3. Remove your frozen banana slices from the freezer, add to the food processor one by one, and blend again until fully incorporated for a creamy mixture.
  4. Add in the frozen blueberries and blitz for a final time. Your ice cream should now be creamy and soft enough to serve, but not runny. Place your ice cream in the freezer to firm up until ready to serve.
  5. Scoop into individual serving bowls and garnish with optional mint leaves, fruits of your choice (we used strawberries), and oats.
