How to Make Vegan & Gluten-Free Pancakes

Just because you follow a special diet, that doesn’t mean you should miss out on the fun of Pancake Day! These vegan-friendly pancakes are also suitable for those who are intolerant to gluten, so absolutely everyone can join in. Pair with fruit and a drizzle of agave syrup for scrumptious results.

Ingredients (Makes 6 Pancakes):

  • 250ml of Hemp or Coconut Milk
  • Egg Replacer (equivalent to 1 whole egg)
  • 125g of Gluten-Free Plain Flour
  • Sunflower or Rice Bran Oil (for frying)
  • Fruit and Agave Syrup (to serve)

METHOD: Scrumptious Vegan & Gluten-Free Pancakes

  1. Place the flour into a large mixing bowl and make a well in the centre. Pour in the egg replacer and a quarter of your chosen milk. Thoroughly whisk together to combine the wet and dry ingredients, pour in another quarter of the milk, and whisk again. Once your mixture is completely smooth, whisk in the rest of the milk. Leave to rest for about 20 minutes.
  2. Heat up a small frying pan with a splash of oil, pour in a spoonful of the batter, and swirl it around so that it coats the base of the pan.
  3. Cook for a few minutes until the bottom turns a golden brown, then flip it over and cook the other side until golden.
  4. Repeat this process until you’ve used up all the batter; you can keep the pancakes warm between batches in the oven.
  5. Serve with blueberries, strawberries, and a generous drizzle of agave syrup on top!
