METHOD: Cheeky Chocolate Mousse

  1. Break your chocolate into a heatproof bowl with 120ml of warm water, and then place the bowl over a saucepan of lightly simmering water. Ensure your bowl isn’t touching the water.
  2. Allow the chocolate to melt for about 6 minutes, keeping the heat at its lowest. As soon as the chocolate has melted, removed the bowl from the heat and stir the chocolate well until it’s smooth and glossy. Cool the mixture for about 2 to 3 minutes, and then stir in three egg yolks with a wooden spoon.
  3. Take a large mixing bowl and whisk up the egg whites to form soft peaks. Sprinkle in the sugar one third at a time while continuously whisking, until the whites are glossy.
  4. Next, grab a tablespoon and fold one spoonful of egg whites into the chocolate mixture to loosen it up a bit. Then, carefully tip in the rest of the egg whites and fold gradually with cutting movements; you want to keep as much air as possible to achieve a light, fluffy mousse.
  5. Divide your mousse mixture up into the ramekins and cover each one with clingfilm, before transferring them to the fridge to chill for at least 2 hours.
  6. Take your chocolate mousse out of the fridge and serve them with a blob of whipped cream, a sprig of mint, or even some dark chocolate shavings!
