How to Make Gluten Free Apple and Cinnamon Waffles

Just because you're gluten intolerant, that certainly doesn't mean you should miss out on deliciously soft and fluffy waffles for breakfast! This recipe shows you what you need to do to achieve sweet apple and cinnamon waffles, using gluten-free plain flour and baking powder. What's more, you don't even need to own a waffle maker or iron to make them; keep reading to find out how!

Ingredients:

  • 2 Large Free-Range Eggs
  • 65g of Unsalted Butter
  • 225g of Gluten-Free Plain Flour
  • ¼ tsp of Sea Salt
  • 300ml of Semi-Skimmed Milk
  • 2 tsp of Gluten-Free Baking Powder
  • 2 Braeburn Apples
  • ¾ tsp of Ground Cinnamon

Optional Toppings:

  • Natural Yoghurt
  • Maple Syrup

Equipment:

  • Griddle Pan (approx. 25cm x 30cm) or Waffle Machine
  • Small Saucepan
  • Whisk
  • Mixing Bowl
  • Grater
  • Sieve
  • Wooden Spoon
  • Pastry Brush
  • Spatula

Baking

METHOD: Soft & Fluffy Gluten-Free Waffles

  1. Melt the butter in a small saucepan over a low heat, and then leave to cool. Crack the eggs into a mixing bowl and whisk in the milk until combined. Next, sieve in the gluten-free baking powder, gluten-free flour, salt and cinnamon, then whisk until fully combined.
  2. Stir in most of the butter and then prepare the apples. Remove the stalks and grate the apples whole, including the skin and core. Fold two thirds into the batter and give it a stir.
  3. Heat up a griddle pan over a high heat and brush over the remaining melted butter.
  4. Pour in the batter mixture and tilt to cover the whole pan evenly. Reduce the heat to medium-low and leave to cook for amount 6 minutes, but keep a watchful eye over the pan. The bottom should be golden brown in colour when it's ready to flip! Once ready, carefully flip over and cook the other side for a further 6 minutes or until golden and cooked through.
  5. Slice into 6 pieces and serve with a dollop of natural yoghurt on top and a scattering of grated apple or apple slices, a drizzle of maple sugar, and a dusting of cinnamon!
