  • 250g of Unsalted Butter (Softened)
  • 335g of Caster Sugar
  • 1 Egg
  • 1 and ½ Teaspoons of Vanilla Extract
  • ½ a Teaspoon of No-Colour Almond Extract
  • 385g of Plain Flour
  • 1 Teaspoon of Baking Powder
  • 1 Teaspoon of Salt
  • Royal Icing Recipe
  • Meringue Powder
  • Black Icing Colour

  1. Preheat oven to 160°C. In a large bowl, beat the butter and sugar with an electric mixer until it’s light and fluffy.

  2. Beat in your egg and extracts.

  3. Mix the flour, baking powder and salt, gradually adding to the butter mixture after each new addition.

  4. Do not chill the dough. Divide the dough into 2 balls. On floured surface, roll each ball into a circle approximately 30cm diameter x 5mm thickness.

  5. Dip the cookie cutter in flour before each use. Bake your cookies on an ungreased cookie sheet for 8-11 minutes, or until cookies are lightly browned.

  6. Prepare royal icing following recipe directions. Tint black. Use tip 2 and full-strength black icing to outline moustache on cookie. Use a cut parchment bag and thinned black icing to fill in. Let set. Use tip 4 and full-strength black icing to outline details. Let set.
