Unicorn Frappes



This unicorn frappe is the most magical drink you will sip all summer! The Candy Melts painted on the glass make this really special, and if you omit the whipped cream on the top, the frappe is dairy-free and full of fruit to make it healthier choice.

Ingredients:

  • 330ml coconut milk
  • 330ml apple juice
  • 450g frozen berry mix
  • Freshly whipped cream
  • Wilton Candy Melts – Pink
  • Wilton Candy Melts – Blue
  • Wilton Candy Melts – Bright White

Unicorn Horn:

  • Wilton ‘Marvelous Meringue’ Mix
  • Wilton Icing Colour – Violet
  • Wilton Icing Colour – Sky Blue
  • Wilton Icing Colour – Pink
  • Wilton Sanding Sugar – Pink
  • Wilton Sanding Sugar – Black

Equipment:

  • Wilton 10” x 16” Silicone Baking Mat
  • Wilton 5-Piece Decorating Brush Set
  • Duo Tip Coupler
  • Wilton Recipe Right 11” x 7” Biscuit and Brownie Tin
  • 12” Disposable Piping Bags
  • Wilton 1B Drop Flower Piping Tip

Instructions:

  1. Make the Unicorn Meringue Horns. Prepare the meringue mix as per instructions. Divide into three and colour violet, pink and blue. Fit a piping bag with the Duo Tip Coupler and fill with the three different colours of meringue. On the prepared tray, pipe horn shapes with the meringue mix. Sprinkle with sanding sugars to decorate. Bake and cool as per instructions. The meringues can last up to one month in an airtight container.

  2. Prepare the glass. Melt the candy melts as per packet instructions. Paint the Candy Melts randomly onto the inside of the glass to decorate. Set in the fridge.

  3. Make the Fruit Frappe. Blend together the fruit, juice and milk until smooth enough to drink. Pour into the prepared glass.

  4. Fit a piping bag with tip 1B and fill with the whipped cream. Pipe on the top of the frappe and decorate with sanding sugars. Top with a unicorn horn and some straws.
